Merlot
The Kirby Estate 2020 Reserve Merlot is a bold, robust expression of red and dark fruits and spice. The fruit was sourced exclusively from sandy loam soils at Kirby Vineyard in Niagara-On-The-Lake, and hand picked in baskets from 18-year old vines in 2 batches on October 24 and November 7 at 23+ brix and 25+ brix. The berries were cold soaked, pressed and transferred to steel tank for 2 weeks for primary fermentation from wild yeast. The wine was transferred to new and neutral French barrels for secondary fermentation and aged for 20 months before filtering and bottling in July of 2022 at 14.5% abv. Selected barrels were chosen to showcase a bold, robust expression of red and dark fruits and spice.

We prefer our steaks Chicago style - cut thick, painted with olive oil and salt and pepper and charred to a “bark” on the outside, while medium rare pink on the inside. If you wish – you can spice up the steak by rolling it in chopped garlic. It marries very nicely on the cheese board with sharp and smoked cheddars, manchego and blue cheese.
